Haley: Video Interview on Going Vegan

This week we share our video interview with Haley—she talks about what life events led her to going vegan, advice for those thinking about cutting animal products from their diet, and how to stay strong as a “black sheep” in the world.

Once I got a little older, I started really thinking of my health. I didn’t want the same things to happen to me that happened to him.

Like Haley said in the video, going vegan doesn’t have to be expensive. Here’s her minimalist vegan pantry list. It’s full of some key ingredients that can easily be made in large quantities at once (think rice, beans, lentils, etc.). To make things even more affordable, shop in the bulk foods section at your local store.

Haley’s Pinterest Board is FULL of delicious and easy vegan recipes. I’ve tried a few already—the buffalo cauliflower burgers are just knockout delish and will definitely be a staple in my kitchen. Here are a few of her favorite vegan recipes to make—

Vegan Mac n’ Cheese

Vegan Cauliflower Tacos

Vegan Banana Bread with Walnuts

Vegan Tuna Salad

Vegan Pumpkin Spice Cupcakes

Haley offered this super helpful list. All the brands on the right-hand side are vegan—that means they don’t use ANY animal products nor do they test on animals.

A peek inside her gorgeous little greenhouse she and her guy built. She showed us her sensitivity plants—which I didn’t even know existed. So cool.
